This is a good basic mix to keep on hand for quick pancakes.
This recipe comes from The Vegetarian Mother’s Cookbook by Cathe Olson.
4 cups whole wheat pastry four
4 cups whole wheat flour
1/4 cup baking powder
1 tsp baking soda
1 tsp sea salt
1/4 cup evaporated cane juice (optional) *I’ve never added this
1 Tbsp ground cinnamon or pumpkin pie spice
sift or whisk all ingredients together in large bowl until completely combined.
When ready to use:
Scoop 1 1/2 cups of the mix and add:
- 1 1/4 non-dairy milk (I usually need more b/c I add oats to my mix)
- 1 flax “egg” (or reg egg if not veg)
- 2T oil (I use coconut oil)
- fruit or chips
- *Sometimes I also add some ground oats to the mix.
